The Bitnami Moodle solution uses the bitnami_moodle database and a bn_moodle user to connect to it. So you can either use the root user and connect to that database
mysql -u root -p bitnami_moodle
or get the credentials of the bn_moodle user from the /opt/bitnami/apps/moodle/htdocs/config.php file and use that user to connect to the database
mysql -u bn_moodle -p bitnami_moodle
Once connected, you should be able to find and edit all the Moodle's information.
