No, you won't find any compatibility issue with a newer version of Magento. If you see the Magento requirements you will find that you can use any version from the
2.X series. So you are by far covered by the Bitnami stacks, you will only gain benefits upgrading the version of Apache (and not so many, as the majority of the releases of Apache are minor and contains bug fixes).
In Bitnami we build and test every application before releasing to the public market, so in the remote case a new version of Apache presents some incompatibilities with Magento we would inform users in blog or we wouldn't update Apache in the next release of Magento, to keep ensuring that the application will work flawlessly.
