There's not an easy way to update NGINX on the Bitnami stack. You need to compile it from source and replace the component on the stack which is not a trivial process.
We release a new version of the stack whenever a new version of the components included on it is released. Bitnami stacks are designed to be updated by migrating your data to a new stack/server. Therefore, the easiest way to maintain your stack up-to-date is to create a backup of the data, launch a new server, and move the data to the new server. Once the new server is up and running and the migration process has finished, remove the original server.
