In the first post you set that you were using Microsoft Azure but then you followed the documentation for the Bitnami AWS Multi Tier images, which platform are you using?
From this information, I understand you that you are using the SingleVM WordPress solution, not the Multi-Tier one so I'll explain how to change the MySQL root password based on that.
It's important to mention that you are following a wrong documentation section and that's why it doesn't work. The SingleVM WordPress solution includes MySQL, not MariaDB, so these commands are not doing anything. The section you need to follow is this one
Can you follow that section in the documentation? Please note that you are using MySQL 5.7 so use the proper commands of the documentation.
Before you start the process, please note that we configure MySQL with the same password we configure the application when launching the instance. If you do not remember that password, can you check if the logs with the password are still in the instance?
sudo cat ~/bitnami_credentials
sudo cat /opt/bitnami/var/logs/*
