I'm using Bitnami Moodle 2.7.1 (Build: 20140714) and I have some concerns regarding the security of the underlying data.
Is there some way I could encrypt the student data in the MySQL database?

Encryption of only certain fields should normally supported by the application, and as far as I know, Moodle is not able to do that. In that case you should analyse some transparent data encryption support for the database. For MySQL there seems to be several proprietary tools, but from version 5.7.something, it seems to be supported in the InnoDB storage engine.
