Installing into a Docker container was sort of an exercise but I if I can sort out this last problem, I can actually make use of the install - and installing bitnami is MUCH nicer than the standard install!.
I can send emails to the host with telnet and swaks but not with Discourse - settings:
- gives: "There was a problem sending the test email. Please double-check your mail settings, verify that your host is not blocking mail connections, and try again."
BUT swaks actually works giving:

and the mail is actually delivered - I've tried lots of permutations of the Discourse config but can't see what is wrong. Any helpful suggestions appreciated!
