As you are using vSphere I would suggest to use the Bitnami OVA from VMware Cloud Marketplace that are based on CentOS and include the VMware Tools. It is free to download from the Marketplace.
Then you can resize the VM from vSphere and then run the following script into the VM:
We will work on adding this script at boot time so it would be only required to change the size disk from vSphere in the future. Keep us in the loop if that solution works for you.
