We have not used certbot ever. We have different guides in our documentation to generate and renew the certificates, did you follow it?
Regarding the Apache's default page, it seems that the system's Apache package was installed and that's why you see that page now. You will need to run the commands in this post to disable it
However, the Bitnami's Apache will fail to start because some configuration files were renamed

-rw-r--r-- 1 bitnami root 2121 Sep 5 21:29 bitnami.conf.save.1
-rw-r--r-- 1 bitnami root 2045 Sep 5 21:38 bitnami.conf.save.2
I do not know why you renamed the bitnami.conf file but let's recover it first
sudo mv /opt/bitnami/apache2/conf/bitnami/bitnami.conf.letsencrypt /opt/bitnami/apache2/conf/bitnami/bitnami.conf
sudo /opt/bitnami/ctlscript.sh start
