I've been testing it too, and I will share with you a detailed step-by-step guide on how to get it working with a gmail account (or at least, how I got it working). I chose the gmail account because I can share with you the exact configuration, as I don't know the correct configuration of your SMTP provider.
If you want to work via SSH, first you will need to start the SSH service from the VM. It is really easy to do it.
- Start the Bitnami Mantis VM (if possible with a fresh new one, without any modification)
- Login as bitnami/bitnami and change the password through the Virtualbox windows
- Run this command sudo /etc/init.d/ssh start. Now, if you want to continue using the Virutalbox windows, you can do it, and if you want to use ssh, you also can do it.
To configure the mail, follow this steps once logged in as bitnami user:

Now, add this text to the "config_inc.php" before the "}". Don't rename anything or move anything, just add this text

Restart the apache
/opt/bitnami/ctlscript.sh restart apache
Now you should be able to send mails. To try it, you could sign up a test user with a real mail where you could confirm that you received the Mantis Welcome Mail.
