Well, option 1 does not "un-grey" the fields - it just changes the address, leaving it hard-coded.
Option 2, though, should make the fields editable. Simply remove the fields from wp-config and save.
As for phpMyAdmin, here's a cheatsheet how to do it on a mac:
- Open Terminal app
- Type this: ssh -N -L 8888:127.0.0.1:80 -i [PATH] bitnami@[IP]
where [PATH] is the path to ssh pem key you've downloaded (you can simply drag and drop the key into the terminal for the path to appear) and [IP] is the ip address of the server. Both the key and ip are available in the launchpad.
