Current support is for Tomcat 7.0.59. Is there a plan to upgrade Tomcat to 8x and Java 8 anytime soon? A roadmap would help.

The Tomcat 8 installers on that page are all 'dev' builds, and the page even has a pop up which warns that it's not to be used for production.
Is there a build of Tomcat 8 which is not dev?Alternatively is there a build of Tomcat 7 which is running Java 8?
Note that Java 7 has been ended and there are no more updates, so people building new components will want Java 8.
At the moment we haven't any Tomcat Stack version 8 that is not dev, and as you said it is not recommended to use that stack in a production environment. Neither a Tomcat 7 stack with Java 8.

I'll have to update my Tomcat 7's to use Java 8, so I won't wait, but I guess people reading this via Google would be interested.
