If you just want to update the application version you can check this guide. Create a backup before starting the update process.
If you want to move to a different machine, you can create a backup of your SuiteCRM application, launch a new AMI, and restore the backup as explained in the same page.
If you want to update the SuiteCRM application and move to a different machine, you should do both steps.
