I'm using a gitorious vmware image. It works fine, however my question is how to upgrade all the components (preserving the data, of course) when a new version of the aplpiance is released. It seems to me that the gitorious stack has additional components like sphinx, activemq, and others. I haven't found any guide that explains how to upgrade a gitorious appliance.
Installing the new version on another VM then migrating the data is acceptable, if that helps.
Any guide or hint? Thanks in advance

Upgrading the components could be a mess. I would bet for a new BitNami Gitorious virtual machine and migrate the data. Besides, with this method, you always keep your original VM unaltered.
To do so, you have to keep in mind the following:
Other changes you have made on the configuration files (such as the email configuration on the file production.rb, for instance) should be reproduce in the new files provided with the new version of Gitorious in the new virtual machine.
